Composition polyphénolique, potentiel antioxydant et inhibition de l’α-amylase de l’Ail (Allium sativum L.) cultuvé en République Démocratique du Congo

L’ail (Allium sativum L.) est une plante alimentaire et médicinale largement utilisée pour ses propriétés biologiques et thérapeutiques. La présente étude vise à évaluer la composition phénolique, l’activité antioxydante et l’activité inhibitrice de l’α-amylase des extraits d’ail cultivés dans différentes régions de la République Démocratique du Congo. Cinq échantillons d’ail provenant de Bukavu, Goma (deux échantillons), Butembo et Kinshasa ont été utilisés. Les extraits aqueux et méthanoliques ont été obtenus par macération de la poudre de gousses d’ail séchées. L’analyse phytochimique a permis de mettre en évidence la présence de plusieurs classes de métabolites secondaires, notamment les composés phénoliques, les flavonoïdes et les tanins. La teneur en polyphénols totaux a été déterminée par la méthode de Folin-Ciocalteu, tandis que l’activité antioxydante a été évaluée par le test de piégeage du radical DPPH. L’activité inhibitrice de l’α-amylase a été déterminée par la méthode colorimétrique utilisant l’acide 3,5-dinitrosalicylique. Les résultats ont montré que les extraits d’ail présentent une activité antioxydante significative ainsi qu’une inhibition notable de l’α-amylase. Ces propriétés biologiques pourraient être attribuées à la présence de composés phénoliques et d’autres composés bioactifs présents dans l’ail. Cette étude met en évidence le potentiel des variétés d’ail cultivées en République Démocratique du Congo comme source naturelle de composés bioactifs susceptibles de contribuer à la prévention du stress oxydatif et à la gestion du diabète de type 2.
